Talented Executive Chef of Boheme Fired Over Burger Dispute

Rishi Singh was let go from Boheme last night, allegedly over a burger dispute.
I have made absolutely no secret of the fact that I love Boheme and its pizzas and its uber creative head chef, Rishi Singh. I love his smoked jalapeño hummus and his Bangkok fries and his ridiculously decadent lobster pizzas. I really love the fact that he makes all of that from a tiny food truck parked behind the bar. Or, rather, I loved that.

Unfortunately, as CultureMap reported this morning, Singh was fired from Boheme last night, allegedly after a dispute with the owner about burgers.

According to the CultureMap article, Boheme's owner, Morgan Holleman, wanted to make Monday nights at the bar burger nights, and he asked Singh to develop a menu of burgers to be rolled out last night. Though Singh was given "only a few day's time" to work on the menu, he had some viable options come Monday night, but Singh was still not happy enough with his own work to roll out the full menu.

Singh told CultureMap that when he informed Holleman that the burgers weren't ready, Holleman fired him.

Singh told CultureMap, "I won't serve subpar food and food that doesn't meet my standards."

A representative for Boheme provided the following comment:

In employee situations, sometimes it works well for a long time and everything is great, and sometimes things need to change.

Rishi is a great, hardworking chef who's really talented and who everyone at Boheme respects. We wish Rishi the best elsewhere, and we hope to bring in new talent to keep moving forward.

At Boheme, there is a strong urge to serve the highest quality product every time and ensure the best guest experience every time. We are committed to the continuation of that pursuit.

Singh could not be reached for comment.

It appears that for now, sous chef Jordan Economy will be taking Singh's place at Boheme. We're told the regular menu will stay in place for the time being, but that there will be some changes happening at Boheme in the future. Hopefully that involves the construction of an actual kitchen on the premises, which will allow the bar/restaurant to further expand its unique food offerings.

Boheme has become the lame kind of place that hosts paid Culturemap socials and Lexus dealer shakedowns. Pretty soulless from where it began long ago.

Meh, false and empty arrogance coupled with a true talent for culinary skill has once again led to an unhumbled clash between an employee and employer. I've worked with this gentleman before and I'd say yes, amazing talent but a downfall of an empty ego and celebritize complex rewarded through previous Houston media publications. There has to be a bottom line of this is your boss, the person you hired and pays you, you kinda need to do as they say or... yeah, you get fired. Justly.

I totally don't blame him. I totally bet the problem is that pizza simply takes too long to cook compared to burgers and there was no way to pull this off without additional kitchen equipment or degraded service for all the other items.

I don't want to blame him for not wanting to put out subpar food.. It's his name and rep as a head chef on the line.. If it's not ready then it's not... I Trust the head chef coming up with the inspiration for new ideas. And if he says they aren't ready yet then no.. Don't serve crappy food. Your diners want excellence, not a rush half ass job. Shame on them for firing him.. Especially if he's legit..

the chances that this firing is ONLY about a menu dispute are pretty slim. that said, if this guy couldn't put a burger menu together in three days that was up to his standards, he shouldn't call himself a professional chef. this is what happens when hipsters in food trucks start dictating what defines food in our city. this said, it sounds as though the relationship had soured long before Monday

Holleman should fire the person in charge of wines there. Boheme started as a wine bar and it's been consistently horrible in terms of selection, and it's often stored and served warm.

To me anyway, that matters more than snacks.

This is very sad news!! I love his food! Honestly, I wouldn't even want to eat a burger there. It's not conducive to light eating, sharing, and having cocktails with friends, which is what I like to do there...

@european_screed If the places wants a "professional chef" they need to build a Real Kitchen. Which will cost a bunch; getting permits will be a bitch. 


Food truck chefs know what fits their limited space.  Bernie's does great burgers--but that's all they do. (Well, besides fries & grill cheese sandwiches.)  


Singh seems to know what he can do well & will be able to do it elsewhere...

@OKeefe @gossamersixteen Most would deem that behavior at best rather obsessive, or worse neurotic.  While I don't share your neurosis nor predilection for assumptions I wouldn't be caught dead drinking that swill. But please do enjoy never being happy and being overly critical of everything, as that's precisely what the world needs more of.. :)

@kagan34 I'm fine and thank you for asking. Wine is fine, as is lonestar though I don't care for it (entitled to my opinions).  There is a huge difference in say being particular and in being totally anal -- as I'm sure you're quite aware. Every time I've been inside there has been a "wine-snob" complaining that it's not precisely 13c or other completely retentive complaints, (ie. just looking for something to be critical of or complain about) making those hard working people who work their lives far more difficult than it needs to be; which I think is well above and beyond nit picky and annoying behavior. Clearly they're not considerate patrons, nor showing manners to those serving them, and thus we choose to sit outdoors with people who aren't so precious about details that amount to virtually nothing. I'd say if you're just going to complain and be overly snooty/rude then just stay home?
