This Week in Food Blogs: 20 Cupcakes From One Batter & What Hangry Looks Like
The Pioneer Woman: I love pretty much every recipe from The Pioneer Woman. Even before she made it big on the Food Network, I frequently followed her blog posts, and though many of her recipes are not the healthiest things to eat, this week she has a recipe for roasted spaghetti squash and kale -- two of my favorite foods. I just might be making this recipe soon, because the pictures are absolutely beautiful.

Htown Food Truck Reviews: In this week's food truck review, David Sarkozi writes about the Eye of the Tiger sandwich from Third Coast. This $9.50 sandwich is filled with chopped rib eye, grilled red onions, green bell peppers, mushrooms and melted provolone cheese. Sarkozi says you will need a fork and knife to eat it because it's a bit messy.
The Pancake Princess: How have I never seen this blog before? It's all about baked goods, with a special emphasis on pancakes and cakes. Recently, Erika posted about making nearly 20 different cupcakes with 20 different types of frosting from one batter and one frosting mix. Can you say genius? Erika's method, adapted from A Beautiful Mess, begins with making a basic vegan vanilla cupcake batter. She then adds a variety of toppings to a tablespoon of batter per cupcake, such as a dash of cinnamon, shredded coconut and dark chocolate, or chopped almonds. Then she makes a basic vanilla buttercream frosting and places portions in separate bowls to create a variety of flavors such as chocolate, peanut butter and honey, and decorates the rest of the plainly frosted cupcakes with jam, lemon zest, coconut shavings, sprinkles or nuts. What a time saver! Not to mention a beautiful display.

Food Loves Writing: Who doesn't love banana pudding? And who doesn't love being able to make an incredible banana pudding in 15 minutes? Shanna Mallon of Food Loves Writing made this homemade banana pudding recipe adapted from a recipe off of Food.com from user ratherbeswimmin'. Simply whisk together coconut sugar, eggs, salt, corn starch or arrowroot powder, milk, plain kefir and honey. As soon as the mixture is thick, add vanilla extract. Then, stack a few banana slices in a jar, followed by a few scoops of pudding until you reach the top of the jar. Enjoy warm or cool.
The Huffington Post: For those of you who do not know, the term "hangry" is a combination of "angry" and "hungry" -- two emotions that one should never have at the same time. I cracked up while looking at all the photographs depicting the ten things that hangry people do because everything is so true. To make light of a serious problem (being so hungry that you get angry), check out The Huffington Post's humorous interpretation of what hangry people do.
Homesick Texan: Here's a Southern recipe that will make your heart and stomach happy: cauliflower and Gruyère macaroni and cheese. This blogger adds orange cauliflower with shredded Gruyère cheese, heavy cream, ground mustard, nutmeg, cayenne pepper and Parmigiano-Reggiano to elbow pasta. It's baked in a cast-iron skillet (as it should be) until it is bubbly and hot. Even if you live in Texas, this will make you love the great Lone Star State even more.
