Try making any of these five lamb recipes for Easter.
Easter is less than a week away, so if you haven't planned your Easter dinner yet, now is the time to do so. Rather than having the typical honey-baked ham or a smorgasbord of deviled eggs, many homes will celebrate with a delicate, tender and elegant piece of meat such as lamb.

Lamb is not the easiest type of meat to prepare at home. Because it is a specialty meat, you don't want to ruin it by overcooking it or improperly seasoning it. If you're uncomfortable with cooking lamb lollipops to the perfect internal temperature, here are five easy ways for you to enjoy lamb this Easter.

5. Lamb Meatballs

Meatballs are some of the easiest things to prepare and they always make you feel warm and comforted on the inside. Whenever my mom makes meatballs for pasta or subs, she makes them with a combination of ground beef or turkey with ground lamb. The added fat from the lamb makes the meatballs simply succulent. So, if you'd rather make a simple meal for Easter dinner, make some meatballs with lamb and beef. Pile them into a sub sandwich, or place several on top of a big bowl of pasta.

4. Lamb Stew

If you want something super easy to make for Easter, try making a lamb stew, where the Dutch oven does all the work. Coat the lamb pieces with seasonings, brown and sear the sides of the meat in a Dutch oven, then remove. Next, add all of the vegetables you want, like onions, potatoes, carrots, celery and peppers, to the lamb fat, add tomatoes, more seasonings and red wine to create the base of the stew. Next, add the lamb back to the Dutch oven and cook for 30 minutes or so. Serve this stew with crusty bread to soak up all of the delicious broth.

Grilling lamb chops is quick and easy.

3. Grilled Lamb Lollipops or Chops

If you're a grill fanatic, grilling lamb lollipops or chops is an easy task. Simply season the lollipops or chops with salt, pepper, herbs and olive oil, and then grill each side for three minutes to cook the lamb until medium rare. Let them rest for several minutes, then serve. It's a simple way to make delicious meat.

2. Butterflied Leg of Lamb

Roasting a leg of lamb for dinner takes quite some time. But if you want to speed up the process a little bit, simply ask your butcher to butterfly the leg of lab. Butterflying a piece of meat opens it up more, making it a thinner cut of meat. You can cook the leg of lamb with any seasoning of your choice and can cut down on the cooking process significantly.
