My Favorite College Dining Hall Meal: Peanut Butter, Banana, Apple and Granola Wraps

This wrap is a step up from a simple peanut butter and jelly sandwich.
The first meal I ever ate on Baylor's campus during a prospective tour ended up being my favorite item served in any of the residential dining halls. College campuses are notorious for serving the best of the best in their dining halls on campus visit days, so I didn't expect this item to make an appearance on regular class days. But, oh was I wrong.

This wrap is so easy, so simple, yet so scrumptious. The peanut butter, banana, apple and granola wraps get praise each and every time they are served on campus. They're sweet, filling and just make your taste buds sing. Because it is a specialty item, it isn't served all the time, so I decided to re-create it at home so I could have it any time I want to. Here's how you can make my favorite dining hall meal.

First, you will need a large tortilla made for wraps. You're going to be stuffing a lot into the wrap, so you need something that will hold all of the ingredients in tightly.

Place the wrap on a flat surface, then spread a thin layer of peanut butter all over the wrap, leaving an inch-long border between the peanut butter and the edge. You don't want the peanut butter to ooze out when you begin to fold everything together.

Place apple slices on one side and banana slices on the other.
Next, thinly slice an apple and a small banana. Make sure the slices are super thin for the apple, because the hard edges could cut through the tortilla and your wrap would be ruined. I like to use a red delicious apple because they are sweet and full of flavor and are my favorite type of apple. Place the apple slices on one side of the wrap on top of the peanut butter, making sure that they stick.

Then, place thin slices of a small banana on top of the peanut butter on the other side of the wrap. Finally, drizzle enough honey on top of the apple and bananas to make a sticky surface for the granola to stay put. As soon as you finish placing honey on the apple and banana slices, sprinkle crunchy granola pieces all over the fruit.

All of these ingredients offer differing textures and flavors that make this wrap so special.
I always like to add a few raisins to give a chewy texture to the wrap, and because raisins add a little extra sweetness.

I use another tortilla underneath the first one to make sure the content on the inside does not poke through the wrap. Gently tuck the ends in, fold the tortilla and keep the contents tightly contained so that nothing spills out. Then, slice in half and enjoy.

The contrast of textures between the crunchy apple slices and the granola, soft banana slices, sticky peanut butter and honey, and chewy raisins makes this wrap a delectable meal. You will definitely need a big glass of milk.
