Post-Holiday Diet Cleanse: Leek Soup
As the year winds down and all we have left to celebrate is New Year's, everyone says they will start their "New Year's Diet."

It usually starts with cutting out sweets and trying to work out in some capacity each day, but let's be honest, that effort quickly dies and our New Year's resolution to have a bikini body by the spring is not attained.
But here's a recipe that is not only easy to make, you can make a lot to last a long time.
Last Christmas, my mom received the book French Women Don't Get Fat. One of the recipes that kick-starts a diet cleanse is leek soup. Basically, you flush out all of the extra water in your system, fill up on a minimal amount of calories and feel full after you've finished your soup. Try this soup for 48 hours and you'll get the jump on your new diet quickly.

All the soup takes is two ingredients. Leeks and water. Sounds a little bland, but add a hint of salt and cracked black pepper and voilà, you have a flavorful soup to drink for just 48 hours.
If you are making the soup for a 48-hour cleanse, cut the dark green part off of two pounds of leeks after thoroughly washing them to remove dirt.
Place the leeks in a large pot and fill the pot with water to cover the leeks completely. Boil the leeks in the pot uncovered for about 20 to 30 minutes. You want the leeks to be soft but not too mushy.
Season with a little bit of salt and pepper, and drink the soup two to three times a day for 48 hours. If you would like to add some parsley or other leafy green to the soup, by all means, do so!
Leeks are not only great for a quick cleanse, but they taste great in simple chicken soups. For those of you who don't want to take a drastic cleanse like this, try having chicken soup with leeks for lunch and dinner. The liquids will fill you up without adding too many calories to your daily intake.
