10 Oyster Dishes to Try in Houston: No. 3, Oyster Sliders at Lucille's

You know what I love about SeptembeR, OctobeR, NovembeR and DecembeR? It's oyster season! During these months, oysters are at their peak. For the next few weeks, I'll be sampling the most memorable and tasty oyster dishes in Houston.

No. 3, Oyster Sliders at Lucille's

For the record, I'm not a fan of sliders. As a zealous carnivore, I prefer a high meat-to-bread ratio, and with sliders I always feel like I'm getting more bun than burger. I make an exception, however, for the oyster sliders at Lucille's.

It's not simply because Lucille's overloads their sliders with crispy fried Gulf oysters (though the serving is quite generous) so that mollusks trump carbohydrates in terms of portion sizes. Rather, it's the terrific quality of each individual fried oyster that enables the salty, buttery bivalves to provide the alpha flavor. The fluffy biscuits (courtesy of Slow Dough), sweet peppery aioli, and herb salad play complementary but always supporting roles.
