First things first: It's not like pumpkin pie spice is saffron-level expensive. An ounce of the stuff at Penzeys is only about $4.

On the other hand, pumpkin pie spice is -- to me -- the spice equivalent of a unitasker in the kitchen: a tool that serves only one purpose, and not a purpose employed terribly often. I have a hard time spending money on something I'm only going to potentially use once or twice a year, and pumpkin pie spice falls squarely into that problem area.

But what if the mixture of cinnamon, allspice, nutmeg, ginger, mace and cloves had other applications? I decided to find out what else I could make with pumpkin pie spice besides pumpkin pie and was pleasantly surprised at the results. The recipes that follow may or may not feature pumpkin, but are all excellent options for baking your way through the fall -- and all of them contain pumpkin pie spice.

These cookies start with a basic sugar cookie base, to which you simply add rolled oats and pumpkin pie spice.

Pumpkin Pie Spiced Scones

The best part of these scones is the spiced sugar glaze on top, which calls for -- you guessed it -- pumpkin pie spice. The scone recipe also calls for homemade pumpkin puree, which is surprisingly easy to make.

Iced Pumpkin Cookies

Like the scones, these fall-flavored cookies feature a sugary glaze. This glaze is vanilla-flavored, though, giving a lighter touch to the spiced cookies.

Pumpkin Streusel Muffins

This recipe makes muffins so pretty, you'll want to host an autumn brunch just to serve them to your guests.

Pumpkin Pie Spice Rice Krispie Treats

Oof. These make just about the cutest Halloween treats I've ever seen. Get out the candy corn and frosting and let the kids help decorate.

@EatingOurWords alternative - just have cinnamon, nutmeg, allspice, etc individually. No unitaskers. :-)
