You know what I love about SeptembeR, OctobeR, NovembeR and DecembeR? It's oyster season! During these months, oysters are at their peak. For the next few weeks, I'll be sampling the most memorable and tasty oyster dishes in Houston.

No. 4, Oysters 1/2 Shelled at Liberty Kitchen & Oyster Bar

Sometimes the best way to serve an oyster is with nothing at all. And few restaurants do this better than Liberty Kitchen, whose Oysters 1/2 Shelled prove that quality bivalves in their simplest, unadorned form can be exquisite.

Oh sure, Liberty provides cocktail sauce and lemon should you like a kick of horseradish or a burst of citrus with your oysters. And while these accompaniments in theory enhance the mollusks, use them sparingly lest they distract you.

And not to say there's a singular taste experience to be had when you visit the oyster bar. Liberty Kitchen takes diversity (in seafood) seriously and depending on the season, serves oyster varieties from across the country.

I like to think if I stopped by every week for a year, I could eat my way around the United States one oyster at a time.

Raw oysters are the type of thing where, like a spicy tuna hand-roll, I want to know where i can get the best bang for the buck.
