100 Favorite Dishes 2012: No. 13, Ribs at Gatlin's

This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

Along with old stalwarts like Pizzitola's, Lennox and Virgie's, the "new" kid on the block -- Gatlin's -- is one of the brightest stars in our city's barbecue constellation. The daily lines out the door attest to its superiority, as do the accolades Gatlin's constantly receives. We named it Best Barbecue Restaurant in the 2011 Best of Houston® issue, and it's very likely that Gatlin's will be crowned king once again this year -- if not by us, then by our readers.

While everyone has their favorites here, it's the ribs at Gatlin's that have my heart. The ribs have a luscious char on the outside that comes from the low-and-slow smoking technique employed by Greg Gatlin, who uses hickory to impart a sweet aroma and taste. And although falling-off-the-bone rib meat may not be prized at barbecue competitions (WEIRDOS), it's prized here in Texas, where Gatlin's does it right. The meat is never soggy or soft, though, just moist and tender, with a pleasant crunch as you shatter through that exterior char into the sweet rib meat below.

To do Gatlin's the right way, go at lunch when you've got plenty of time to kill. Don't worry about the length of the line -- you'll all get your two-meat plates before the day is said and done, and you'll get them with a genuine smile that's usually delivered by Greg Gatlin's mother. Order some liver-laced dirty rice to go with your ribs and some creamy coleslaw for crunch, and make sure to save at least a little room for one of Gatlin's homemade desserts.

Brought my friend from Missouri here (at your recommend, KS) a couple of years ago and she was super happy for real BBQ again. Surprisingly hard to find in her new home in MN. :)
