This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

This isn't a restaurant. It isn't even strictly Canino's, but rather the produce stalls behind Canino's, the quasi-open-air market on Airline that sells everything from field peas and 1015 onions to fresh eggs and local honey. But it is a pivotal Houston experience: Everyone who lives here should shop at Canino's at least once in their lives.

The sprawling produce market first opened in 1958 and now occupies 20,000 square feet, most of that filled with produce stalls operated primarily by Central American vendors. Don't be fooled into thinking the produce is local or organic -- it's usually not -- but it is very inexpensive and very good. The best part about shopping here, however, is visiting with the vendors and sampling their wares as you browse.

If snacking on free samples isn't enough, though, do what I do when I go to Canino's for an afternoon: Grab a bag of dark-gold, richly flavored pineapple that's been sprinkled with chile en polvo and snack as you walk. Much like salting watermelon brings out its flavor, Mexicans have been dumping chile en polvo -- a subtly spicy combination of chile powder, cumin, oregano and garlic -- onto their fruits for years, enhancing the juicy sweetness of everything from pineapple to corn on the cob. (In fact, you'll recognize it as the same stuff you shake onto a cup of elote.)

A bag of the fresh fruit costs $1 and provides enough for two. Little kids love the stuff, too, and it will keep them occupied as they lick stray juices off their fingers so you can get your shopping done. Or you could be greedy like me and keep the whole bag for yourself.
