It's not just a punchline to a joke in that classic holiday movie, Trading Places. Now it's also a Houston food truck.

L'es-Car-Go -- pronounced just like l'escargot -- will be the city's first all-French food truck. Jean-Philippe and Genevieve Guy, owners of the 14-year-old Bistro Provence in Memorial, will be offering a very different menu on board their new food truck than they do in their restaurant.

Expect a regularly-changing menu featuring soups and sandwiches -- think French onion and a chicken cordon bleu sandwich, or gazpacho and a New York strip steak sandwich with sautéed mushrooms and shallots -- as well as a number of inventive escargot dishes. Yes, the escargot truck will serve escargot.

Planned snail-based dishes include an escargots pocket pita, half a pocket pita filled with escargot, roasted corn, black beans, lettuce, tomatoes, avocado, cilantro and yogurt sauce; escargots beignets; and escargots popcorn, almond-crusted escargot tossed with hot sauce.

The Guys hope to have L'es-Car-Go up and running before the end of April. It will be mobile during the day and available for catering. And on Thursday, May 24, head over to Bistro Provence to visit the truck for its own special holiday: National Escargot Day.
