How To: Make a Dutch Baby Pancake

Where have you been all my life? Seriously, I've been lost without you. You're delicious... and so easy to make...and you're so full of love...and so full of powdered sugar. I love you, Dutch baby pancakes. I love you with all my heart.

So...that was awkward. Now that I've reached a new level of creepiness, we can all move on.

I just discovered the godsend that is the Dutch baby pancake last weekend thanks to my friend Jessica and a day full of brunch, football and mimosas. You may know them as German pancakes, Bismarcks, Dutch puffs, or high-rise pancakes...but I know them as little clouds of heaven. Although you can find them in diners and chains like The Original Pancake House, these babies are too simple not to make at home.

Be prepared to wow your guests. Almost soufflé-like, this light and airy treat rises up in the oven and falls to create a puffed pancake crust. I can already hear the oohs and aahs around the room. It makes the perfect brunch dish - it's easy and versatile, and you can use the recipe to make mini pancakes.

Here's how to make them:

Ingredients yields 4 to 6 servings

  • 6 tbsp butter
  • 4 eggs
  • 1 cup flour, bread or all purpose
  • 1 cup milk
  • 2 tsp salt
  • Pinch of nutmeg optional
  • Drop of vanilla optional
  • Toppings (I prefer lemon and powdered sugar)

    Preheat oven to 425 degrees and place a rack in middle of the oven.

    Add butter to a large oven proof frying pan, cast-iron skillet, or baking dish and place the entire pan in the oven until butter is melted and bubbly. Make sure the butter coats the whole pan.

    Meanwhile, in a large bowl, beat the eggs until light and frothy. Add in the remaining ingredients and mix until the batter is smooth and creamy.

    This baby will puff up in the oven and deflate once removed to form a heavenly crust.
    Using a pot holder, remove the skillet from oven and pour in batter. Bake 20-25 minutes until puffed and golden-brown. It may puff irregularly in the center. The pancake will begin to deflate once removed from the oven.

    The only time it's okay to eat your baby...
    Serve these babies topped with a squeeze of fresh lemon or orange juice and sifted powdered sugar or try any combination you like - maple syrup, fresh berries, apples and cinnamon, whipped cream, bananas, pie filling, honey, jam, crushed pineapple, chocolate sauce, the list goes on.

    Then, eat eat eat and thank God Tebow for bringing these little pieces of heaven to earth.
