100 Favorite Dishes: No. 53, Pork Chop at Perry's Steakhouse

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

Robb Walsh prefers the original Perry's location on Scarsdale; in fact, it came in at No. 20 on his list of last year's 100 Favorite Dishes. But when I feel like getting dressed up and pigging out, I go for one of the high-falutin' Perry's locations to indulge in its finest dish: that famous pork chop, served with Perry's housemade applesauce.

I'll always remember the first time I ordered the pork chop here, an anomaly among the half-dozen steak orders that went up from our table that afternoon. As it was brought out, towering and sizzling atop a black comal, I saw faces fall one by one across the table. Each one read the same: I should have ordered the pork chop. Watching our server carve the massive beast tableside cemented any last lingering bits of regret into place. Perry's steak is good, but there is nothing here to compare with this pork chop.

The chop is famous for many reasons: It's raised and reared especially for Perry's, the prime cut of chop then cured and dry-aged before receiving a one-two-three combination of cooking treatments before it hits your plate. The chop is first roasted, then smoked and then finally caramelized, treated better along the way than your first-born child (assuming, of course, you're eating your young in this analogy). By this point, the flesh is clinging to the bone for dear life and you're about to sink into one of the most decadent treats that a Houston steakhouse has to offer -- and it's not even steak.

While the pork chop is worth every penny of the $30 that it costs (especially considering it's easily split between two, if not three, people), take solace if you're on a budget: You can get a lunch portion of the pork chop for $16.95 during the week, and only $11.95 on Fridays.

Hey again, Kate! Love your blogs. Sooo...question for your photographer, Mr. Walsh.  Did you shoot this chop under a high-powered microscope? Should have a disclaimer: objects appear larger than actual size. My boyfriend and I ate at Perry's last year for my Dad's birthday and walked away feeling like starving children from a third world country

One note: if you take your leftovers home, make sure you specify you want ALL of it to go. I had a disappointing experience where I opened up the box the next day only to find the server had only packed the somewhat dry tenderloin portion, and not the much more succulent "eyelash" part.

I almost always end up ordering the pork chop at Perry's. It's delivered on a cart and they break it apart in front of you into three sections: a flavorful, fattier juicy piece (the one I eat first), at least four finger licking ribs (the ones i eat second), and the tenderloin portion which is leaner and dryer (I take this to go). The house-made hot applesauce is the bomb and the seasoning -- sweet-salty-sticky-smoky -- is perfection.

Scarsdale location has a 'Lunch Cut' pork chop for $8.99. Don't get put off by the lunch cut size. It's a bit smaller than the dinner cut but instead of being "F'ing ginormous" it's just "Freakin' huge".

Another Perry's tip. Try the Bananas Foster (not available at Friendswood or Scarsdale locations). It's amazing. However, I can only vouch for the Clear Lake location Bananas Foster. They use some sort of NASA technology to deep freeze their ice cream so it ends up as hard as a baseball. When the sweet, hot banana goo is poured on the ice cream it softens just enough to eat. At the Memorial City location the ice cream is just regular frozen. When subjected to the molten banana-rum-brown sugar-cinnamon goo the ice cream melts into a sad memory of wonderful bliss that might have been...
