100 Favorite Dishes: No. 30, Oyster Stew at Danton's

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

The first thing you need to know about the oyster stew at Danton's is that it's best enjoyed during Gulf oyster season, which is not right now. Wait until it gets cooler outside -- that way you can take comfort in the warm, thick stew alongside a plate of fresh, raw oysters. It's the best way to enjoy the bounty of the Gulf.

The second thing you need to know about the oyster stew is that it must be ordered with tasso, the famous Cajun "ham." I say "ham" because it's a ham in name only: Tasso is actually made by smoking a pork butt, or shoulder. It's also somewhat difficult to find in Houston, and Danton's is one of the places that stocks it.

The smoky, slightly spicy tasso is vital to the oyster stew because it can easily be too creamy otherwise. The smoke of the meat cuts through that cream and enhances the sweet, briny flavor of the fat oysters inside. And if you can wait until Gulf oyster season, you can enjoy this Cajun treat for $7, and a dozen oysters on top of that for about $10. Pair it all with a hoppy Saint Arnold IPA and you'll be in oyster heaven.
