100 Favorite Dishes: No. 26, The Brisket House Special at The Brisket House

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

When pitmaster Wayne Kammerl opened his own barbecue restaurant in Houston, he brought a legacy with him: The Aggie Special, which has been rechristened The Brisket House Special now that it's being carved and served in its namesake restaurant, far from College Station and the old Tom's BBQ.

The Brisket House may not look like much from the outside, folded neatly into an upscale red brick strip center in Tanglewood. It certainly doesn't look like the kind of place where you'd get good, old-fashioned Texas barbecue, smoked low and slow. And to a point, it's not; Kammerl uses a Southern Pride gas cooker, a travesty to some barbecue purists.

But for someone in the middle of a busy city, the cooker is a godsend: It turns out consistently good barbecue without having to be tended to like a wood-fired smoker. And it makes The Brisket House smell like heaven inside. The Special is the best showcase of all the meats that Kammerl turns out of that smoker, with your choice of brisket, ribs, chicken, turkey or sausage. The first three are my personal choices; just make sure they don't trim the fat off your brisket. Served with three sides of raw onions, Cheddar cheese and a whole pickle, this a serious 'cue hound's meal, so remember to tuck in your tie.

I think their bbq is decent, but with this brisket house special you're missing out on their great baked potato salad.
