100 Favorite Dishes: No. 67, Baleadas at Honduras Mayan

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

The baleada is criminally underappreciated. And aside from a general dearth of Honduran restaurants in Houston, I can't figure out why. If I lived closer to Honduras Mayan, I'd be eating them every day.

The baleada sencilla -- or "simple" baleada -- at Honduras Mayan is only $1.75. And just that one baleada will make a brilliant breakfast: a huge, fat, fluffy, platter-sized flour tortilla that contains a thick spread of refried beans, a crumbling of salty white cheese and tangy crema that tastes more like sour cream than the Mexican crema we're accustomed to. For breakfast, you can add eggs for 25 cents more. And I do. But I also spring for the extra avocados for another quarter more.

The result is a meal that's a hybrid of a breakfast taco and a torta. And although this traditionally Honduran meal can be eaten any time of day, it's during breakfast that I enjoy baleadas the most, especially with a cup of Honduras Mayan's strong coffee (with unlimited refills) and a side of sweet, nearly caramelized plantains.

Enough with food trucks doing takes on tacos. I want to see a food truck take on the mighty baleada.

I was just in Honduras earlier this month and can testify that the baleadas at Honduras Maya are on par with those from the most traditional stands in Honduras. Also good at Maya, yucca con chicharron and conch soup.

I really did not care for baleadas period.  They just seem like a bigger thicker version of an everyday breakfast taco we would construct at home.  And I really dislike thick flour tortillas.What I did love at Honduras Mayan was the stuffed chayote (pear squash).  Oh my word, could not stop eating it.  Stuffed with cheese, lightly breaded and fried then drenched with a mild salsa de tomate.  The chayote turned out tender and the cheese melted perfectly so that it oozed.  I must get back there, it's been too long.

Oh, but Honduran trucks do make baleadas. Seek one out on Airline near 610.

Too sweet? Hmm. If anything, they verge on too salty for me sometimes. I wonder if you got an "off" baleada that day...
