What a Crock: Melt-in-Your-Mouth Meatloaf
I had never heard of cooking meatloaf in a crock pot. When I found this recipe, I was intrigued, especially after reading the positive reader reviews. I just had to give it a try.
It's meatloaf! What the heck is not to like about meatloaf? Best part--I had every single ingredient already at home. That's a first. Just mix the first six listed ingredients in a bowl, form a small oval log, and transfer to a slow cooker. Set on LOW and let cook for five hours.
File this recipe as a keeper. The meat was moist and had a wonderful texture. It held its form and never crumbled apart. Sure, I've had better meatloaf, but never one that was this tasty and easy to make. Pair with a side of roasted red potatoes and broccoli, and you've got yourself a meal.
Here's a hint--you can even simplify this recipe a bit more. Just follow the first half of the directions in regard to the meat preparation. The second part is mixing a few ingredients together to make a sauce. The final product is a glorified version of barbecue sauce. Eliminate that small headache and just top the meat with about ¼ of your favorite bottle. It will taste just as good and saves you about ten minutes.
A small family should figure to get two meals out of this. Wrap up the leftovers and toss in the fridge. They make for great sandwiches the next day.
