Where Are We Eating?

At this restaurant, "pork sliders" are a clever combination of Chinese, Japanese and American influences. Hoisin-marinated pork loin is portioned into small, fluffy, bao-like pancakes -- the same pancakes used to eat Peking duck -- then topped with scallions and cucumbers. Does this dish look familiar to you?

These are not buns used to serve Peking duck. Peking duck are served with thin pancakes. The restaurants in houston that serve leavened baos with their "Peking duck" should not be allowed to call them peking duck. Don't give them street cred by referring the baos as being used with duck.

Ouch. Guess somebody takes issue with how the Cantonese like to serve Peking duck.
