Ingredient of the Week: Napa Cabbage

What is it?
Napa cabbage is a delicate form of cabbage that grows in elongated formations rather than the tightly packed sphere shapes. The leaves are much thinner, with a thick stem running down the middle of each with curly, ruffle-like ends. Napa cabbage is slightly sweet with thinner, lettuce-like leaves.

What is it used for?
Napa cabbage is frequently used in Asian cuisines - particularly in kimchi. The condiment is so popular in South Korea, a recent shortage in Napa cabbage there (due to several random weather factors) is causing unrest among the population. In addition to fermented, spicy Korean condiments, Napa cabbage can be used raw in slaws and salads as well as in quick-cooking stir-fries.

Any grocery store with a decent produce section.
