Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #33 The Picnic Platter at the Grove

The Picnic Platter at The Grove is a daily assortment of Chef Ryan Pera's cured meats, homemade pickles and preserves, and selected cheeses. Pera has quite a talent for charcuterie. Nobody in town does a better job with the dry cure stuff -- his dense, hard salami with whole peppercorns and his Spanish chorizo with smoky pimenton are awesome.

Pera was already doing some great charcuterie when he met Morgan Weber, the cutting-edge pig farmer who started Revival Meats. Talk about a match made in heaven. Now Pera is making lardo with Weber's mangalitsa pigs. The wooly European pig was originally raised for the lard. It doesn't yield a lot of pork, but the fat is exceptional. It sure makes some great lardo.

Lardo is Mario Batali's favorite form of salumi, and it's just what it sounds like -- pure pig fat. It's cured with spices for a couple of months and then shaved into thin slices. Put a sliver of this stuff on a piece of toast and you'll be amazed at how good lard can taste.
