Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #73 Greek Burger at the Hubcap Grill, 1111 Prairie

Ricky Craig didn't invent the Greek burger or the muffuletta burger. But he sure got them right. The Greek burger tastes like a burger in the middle of a Greek salad. The black olives, feta and green peppers offer an exciting change of pace from the standard burger dressings. And the muffuletta burger's combination of olive salad and burger meat is absolutely inspired. Both come naturally since Ricky Craig has been making Greek salads and the olive salad for the muffuletta sandwiches at his parents' restaurant, Craiganale's, for years.

Before he opened the Hubcap Grill, Ricky Craig did a tour of famous burger joints. The Clover Grill on Bourbon Street in New Orleans was his main inspiration. "Their burger patties are so huge, they actually put hubcaps over the burgers while they are on the griddle to help cook them through," he said. That explains the name of his tiny burger joint downtown.

With the techniques of other famous burger joints firmly in mind, Craig set out to do everything right. He wanted to offer the perfect burger, crispy fries and the best condiments. He decided to serve bottled soft drinks because they taste better than fountain drinks. He even has a selection of microbrewery root beers. Thanks to all this attention to detail, The Hubcap is one of Houston's favorite burger joints.
