Robb Walsh's 100 Favorite Houston Dishes: #76 Mac n' Cheese at Two Saints, 12460 Memorial

Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #76 Mac n' Cheese at Two Saints, 12460 Memorial

The stunningly rich mac n' cheese at Two Saints restaurant at 12460 Memorial Drive contained thick bacon chunks and chopped jalapeños baked in an oval casserole with a four-cheese blend. I believe the cheeses were gruyere, cheddar, parmesan and mozzarella, but I could be mistaken.

The cheese sauce overflowed while the dish was cooking so that lava-like melted cheese oozed down the sides of the crockery. It was a very rich version of macaroni and cheese--maybe too rich. After six or seven big bites, it slowed me and my tablemate down. Between the two of us, we could barely finish half of the portion. We took the rest home in a doggy bag.

And what a lovely thing it was to nuke at four in the morning.
