Robb Walsh's 100 Favorite Houston Dishes: #84 Salchi-Burger at Brisa Cocina, San Felipe and Post Oak
Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #84 Salchi-Burger at Brisa Cocina, San Felipe and Post Oak
When I hear "salchi" I usually think of hot dogs, as in "salchipapas," the Peruvian fast-food creation consisting of french fries topped with hot dog slices and a lot of condiments. The impressive salchi-burger at Brisa Cocina Mexicana is a hamburger topped with jalapeño sausage slices, ham and melted cheese, and served on a toasted bun spread with refried beans and spicy mayo. Condiments include tomato, sliced onion, lettuce and avocado.
It's sort of a cross between a hamburguesa estilo Monterrey and one of those wacky Los Angeles combo burgers John T. Edge wrote about in the chapter titled "Going for Baroque in Los Angeles" in his book Hamburgers and Fries. Hamburgers are topped with chorizo, pastrami, chili con carne and much more in L.A. Edge described one "double puck" hockey burger topped with crossed "hot dog hockey sticks."
Anybody know where I can get some salchipapas?
