Hot Hungarian Gyulai Kolbasz

An Eastern European friend gave me some Gyulai salami recently. My kids won't eat it, and neither will my dog. But I love the stuff. It is the hottest salami I have ever encountered. The one I tried is made by Bende Meats, a company just outside of Chicago that specializes in Hungarian products. The company imports Hungarian paprika and other products and makes sausages and salamis patterned after the famous kolbasz of Hungary.

The original Gyulai kolbasz is made in the town of Gyula, Hungary. Since the mid-1800s, Gyula has been the home of a famous butchers' cooperative. The town's salami won a gold medal at the Brussels food exhibition in 1935 and has become one of the most famous salamis of Europe. It is made with pork, garlic and so much paprika it will turn your plate orange.
