Freeze Frenzy: Save the Sorrel!

With a hard freeze coming tonight, Houstonians are rushing to harvest their winter gardens. "I am cutting all the citrus off the trees in my yard tonight," chef Bryan Caswell told me. Gardeners are bringing as many of the greens and lettuces as possible to avoid losing them. Look for a bounty at this weekend's farmers' markets.

I think I'll drop by the Emile Street Community Garden this afternoon and see if the Last Organic Outpost gang needs any help with the harvesting. I saw a lot of salad greens and a beautiful patch of sorrel over there that I would hate to see go to waste. The sour sorrel leaves are an excellent addition to a salad. They are also used in a lot of famous Eastern European soups, like Polish shav.

Sorrel soup is easy to make. Recipes usually call for little more than potatoes, pureed sorrel and chicken stock. Here's a sorrel soup recipe from chef Gabrielle Hamilton of Prune that ran in New York magazine.
