Taco Truck Gourmet: Pan de Elote LaLa
I stopped by the "LALA" Pan de Elote trailer on Telephone Road between Hobby Airport and Beltway 8 on Sunday morning and bought some hot cornbread from Gilberto. He said that this kind of cornbread was very popular in Monterrey where he came from. The round loaf was hot off the griddle. It was made with lots of whole kernel corn, and it was very sweet. I set it on the table and we nibbled on it all day. I finished off the last of it with a big bowl of homemade borscht.
When I think of cornbread, I think of Southern cooking. In fact, Cornbread Nation is the title of the annual collection of outstanding Southern food writing put out by the Southern Foodways Alliance.
