Bartender Chat - Katherine Apple of Hearsay

When we walked in to Hearsay (218 Travis) last Friday night, bar manager Brinton Douglas was preparing to shoot a live segment for WB 39 on the bar's holiday cocktails. Before shooting, though, he was nice enough to take a few minutes to seat our large party. It's not every day that we get to watch a live news segment while sipping our cocktails. In fact, we even ordered the featured cranberry mojito. That night, Douglas was celebrating his birthday, so he was off the clock. Instead, Katherine Apple took great care of our group.

Apple has been a bartender for 10 years, and she takes mixology very seriously. "I focus on delivering top-quality drinks quickly," she said. "In my opinion, I make the best dirty martini." Was this a challenge? Of course! We had to order one. "The trick is in the shake. Make sure you have a layer of ice." We are by no means expert dirty martini drinkers, but we've had our fair share. Apple's is definitely one of the best - perfect blends of vodka and olive juice in a chilled glass. It's the kind of martini that makes you come back every weekend.


Mixology is not just Apple's profession, it's her passion. "I'm currently studying beverage management and marketing at the Hilton College of Hotel and Restaurant Management at the University of Houston," she explained. "I even started the first student organization devoted to wine and spirits, the Wine and Spirits Management Association." Apple is the president of the association. and Douglas is the vice president. It's almost a family affair at Hearsay.

So, what's her plan after graduation? "I would like to open my own bar," Apple said. "I speak Spanish, so I may end up in San Miguel de Allende." We hope for now she stays at Hearsay mixing up deliciously addicting cocktails.
