Food writer extraordinaire John T. Edge is in Houston checking out taco trucks for a new book he is working on about American street food. I took him to visit some trucks on Longpoint. At the Refresqueria Rio Verde truck, I saw a hand-painted sign for Frito Pie and decided to order one. Here's a video of Leslie, the woman behind the counter, whipping one up.

Back in the day (1950s).. of non-plastic Frito bags, a frito pie was just the ticket at half time at the Uvalde-Carrizo Springs high school football game.
The plastic bags used today are awful for the frito pie experience..
