Mini Thanksgiving, Continued: Pecan Pie

A Thanksgiving feast wouldn't be complete without dessert. That goes for a mini-Thanksgiving dinner too. Last week, we gave you the recipe for the main course of a mini-feast.

Miniature pecan pies will put the finishing touch on your meal. They may also help you control the holiday calories, assuming you don't eat them all yourself.

​Here's what you'll need:

  • 3 ounces cream cheese
  • 1 stick butter
  • 1 cup flour
  • 1 egg
  • ¾ cup brown sugar
  • 1 teaspoon vanilla
  • 2/3 cup chopped pecans
  • 1 tablespoon margarine

Pre-heat over to 350 degrees. For the pastry, mix cream cheese and butter together until creamy. Add flour and mix. Roll into a large ball and chill.

For the filling, mix egg, brown sugar, vanilla, margarine and pecans in a large bowl.

Divide pastry dough into 24 small balls. Place in pan and spread dough with thumb. Add 1 teaspoon of filling to each.

Bake at 350 degrees for 15 - 20 minutes.
