Elsie's Dulce de Leche
Goat's milk cajeta is popular and widely available in Mexican specialty stores (Coronado brand is the most common). But many people prefer the milder flavor of cow's milk caramel sauce, which is known as dulce de leche in Latin America. You can make your own dulce de leche at home.

This could possibly be the easiest dessert recipe of all time.
Homemade Dulce de Leche (from The Tex-Mex Cookbook)
- 1 can sweetened condensed milk (such as Eagle brand)
In a large pot over high heat, bring water to boil and immerse the can of sweetened condensed milk completely. Reduce heat to a low boil. Cook the sweetened condensed milk for three hours in the covered pot. The paper label will disintegrate, but don't worry about it.
Remove the pot from the heat and carefully extract the can from the pot with tongs. Allow to completely cool to room temperature before opening with a can opener.
Serve as a dessert sauce over vanilla ice cream, crepes or sundaes, or use in recipes that call for caramel sauce.
