Try the quesadillas al pastor, lovingly topped off with sour cream, avocado, and cilantro. You get two salsas with every order, a fiery red and a tart green, and a little foil pouch full of radishes and marinated onions.

Chef Nicolas?
The truck was recently purchased by a seasoned kitchen veteran named Nicolas who has worked in Houston restaurants, including Carraba’s and Pappa’s Brothers Seafood, for the past 22 years. Nicolas decided it was time to run his own business. He says the hours are long, but he doesn’t have a boss anymore, so it's worth it. -- Robb Walsh

I've seen this one many times but never stopped; it does a good business. I'll have to give it a try. There's another one by the same name usually parked on Bissonnet about a mile outside the Beltway and a 3rd one that seems to move around a lot.
Glad to see some another entry in the Taco Truck Gourmet series.
